It's summer time and my favorite season to enjoy fresh and delicious salads. Plenty of seasonal produce to make your favorite salad bowl.

One of my favorite salads this summer is this Thai crunchy salad. So fresh, tangy and crunchy on every bite.... and

Did I mention it is so easy to make?

A simple mix of green and red cabbage, shredded carrots, cilantro, green onions, crushed peanut and a drizzle of the most savory delicious peanut dressing.

I think the star of this salad is the peanut dressing. It is creamy and tangy, with just the perfect sweetness from the honey to bring a total burst of flavors in your mouth.

We enjoyed this delicious Thai crunchy salad with honey garlic grilled shrimp skewers ... a perfect COMBO!

  • Yield 4 Servings

  • Prep time: 10 Minutes | Cook time: 15 Minutes | Total time: 25 Minutes


  • 1 bag of Trader Joe’s organic cabbage mix (with carrots)

  • 1 cup of dry roasted peanuts

  • 1/4 cup of chopped cilantro

  • 1/4 cup of chopped green onions

  • 1/2 cup of peanut dressing

  • 1 tsp of lime juice

  • Few lime wedges for garish


  • 1/4 cup peanut butter

  • 1 TBSP sesame oil

  • 1/4 cup soy sauce (I used coconut aminos)

  • 2 TBSP Rice wine vinegar

  • 2 TBSP of Yellow Bird Sriracha or chili paste 1/4 tsp of grated ginger

  • 1 TBSP of chopped garlic

  • 2 TBSP of coconut sugar

  • 1/4 tsp of grated ginger

  • 1 TBSP of water


For the peanut dressing, simply whisk all ingredients together to reach ideal creamy consistency (you may add a little more water to thin it out - about 1 to 2 TBSP)

In a large bowl mix the cabbage, peanuts, cilantro, green onions, pineapple and toss it with this creamy peanut dressing. Squeeze fresh lime juice (1/2 lime) over the top to brighten all the flavors and garnish with a few wedges of lime.
