A simple mix of green and red cabbage, shredded carrots, cilantro, green onions, crushed peanut and a drizzle of the most savory delicious peanut dressing.
I think the star of this salad is the peanut dressing. It is creamy and tangy, with just the perfect sweetness from the honey to bring a total burst of flavors in your mouth.
We enjoyed this delicious Thai crunchy salad with honey garlic grilled shrimp skewers ... a perfect COMBO!

INGREDIENTS
1 bag of Trader Joe’s organic cabbage mix (with carrots)
1 cup of dry roasted peanuts
1/4 cup of chopped cilantro
1/4 cup of chopped green onions
1/2 cup of peanut dressing
1 tsp of lime juice
Few lime wedges for garish
HOMEMADE PEANUT DRESSING
1/4 cup peanut butter
1 TBSP sesame oil
1/4 cup soy sauce (I used coconut aminos)
2 TBSP Rice wine vinegar
2 TBSP of Yellow Bird Sriracha or chili paste 1/4 tsp of grated ginger
1 TBSP of chopped garlic
2 TBSP of coconut sugar
1/4 tsp of grated ginger
1 TBSP of water
INSTRUCTIONS
For the peanut dressing, simply whisk all ingredients together to reach ideal creamy consistency (you may add a little more water to thin it out - about 1 to 2 TBSP)
In a large bowl mix the cabbage, peanuts, cilantro, green onions, pineapple and toss it with this creamy peanut dressing. Squeeze fresh lime juice (1/2 lime) over the top to brighten all the flavors and garnish with a few wedges of lime.
