It’s is summer and the best time to enjoy refreshing and easy recipes. Here is one of my NEW favorite recipes “KEY LIME CAKE”. This recipe is inspired by one of my mom’s best friend from Ecuador and now sharing it with you . This is a cake that is not only spongy and tasty but the sweet and lime sauce is the best, and you want to eat in spoonfuls. Summer brings in season many fruits and vegetables and personally loving the citrus produce to make a variety of recipes.
Not only it is an easy recipe with few ingredients that you may gave in your pantry already.

This is perfect summer cake to enjoy with family and friends, so who is making this recipe?
1 cup of Flour
200 grams of Butter
200 grams of sugar
1/2 tbsp of baking powder
75 grams of milk
Lime cream sauce:
1/2 cup of Lime juice
1 can of Condensed milk
1/4 cup of heavy whipping cream
Lime zest from 1 lime for garnish and lime slices
Using a stand mixer or hand held mixer, start combining the sugar and soften butter for about 5 minutes until creamy in medium speed
Then start adding one egg at the time and mix for about 1 minute
Then lower speed and add the flour in batches
Add lime zest, milk and baking powder
Pour cake batter into a bundt cake pan already greased
Bake at 350 degrees for 45 minutes
Once ready remove form oven and let it cool for 20 minutes.
For the lime sauce
In a bowl mix whisk together the condensed milk, lime juice and heavy whipping cream. Refrigerate until is time to serve.
Remove cake from pan into a nice cake stand, then pour over the creamy lime sauce in the center of the bund cake and over the top of the cake.
Decorate with lime zest and thin lime slices, eatable flower or whipping cream
