15 minute⏱ Friday Pasta Dinner w/Creamy Mushroom Sauce

Just a few ingredients for a delicious comforting meal- ready in 15 minutes.
Ingredients:
1 package of Cacio e Peppe Ravioli
1/2 sweet yellow onion (finely diced)
2 garlic cloves (finely minced)
1/2 a cup of heavy whipping cream
1 package of baby Bella mushrooms
1/4 tsp of thyme
Salt and pepper to taste
Chopped parsley
Grated pecorino Romano
2 TBSP of butter
Lemon zest
In a hot pan, sautee onions for about 3 minutes, then add mushrooms and cook for about 4 minutes, stirring occasionally.
While this is cooking add fresh ravioli in hot water. This cooks in about 3-4 minutes.
To the mushroom and onion mix, add minced garlic & heavy whipping cream and mix all ingredients together.

( You may want to add about 2 TBSP of pasta water to thin out the creamy sauce) my secret ingredient is lemon zest to brighten this dish.
Then season with salt, pepper & dry thyme. Simmer for about 4 minutes.
When pasta is ready drain so it doesn't overcook. In a shallow bowl, add pasta, the mushrooms sauce, drizzle EVOO, sprinkle fresh chopped parsley & grated pecorino Romano.
